These crumbed chicken fillets are a good crowd pleaser they are lean, baked not fried and they taste good!
Skinless and boneless chicken thighs work best for this dish, I tend to buy the semi bone in because it’s usually cheaper and I take the bone out myself.
If the thigh has the skin on just peel it off turn it over and you should see the top of the knuckle. Run a sharp knife along both sides of the bone only cutting the surface of the thigh not all the way through. Stand the thigh up and run the knife down between the bone and thigh, use a light sawing motion as only a butcher’s knife is sharp enough to do it in one cut! This takes practice and take note, all will be hidden under the crumbs!
Boned out chicken thighs
In a bowl crush cornflakes untill they look more crumb like then mix in taco seasoning. (I just use my hands to crush the cornflakes).
Put egg in another bowl give egg a light whisk with a fork.
Coat both sides of the chicken fillets in the egg mixture then in the Cornflake/taco seasoning crumbs. Place in an oven dish and bake in a hot oven until the chicken is cooked through. Enjoy!
