Muffin Break?

I took a break from plastering to make muffins for lunch today, I started to make wholemeal muffins when it was decided that chocolate wholemeal muffins would be much more exciting so as usual I didn’t follow a recipe fully and added a chocolate twist.

Chocolate Wholemeal Muffins

50 grams Butter

1/2 cup brown sugar

1 egg

3/4 cup wholemeal flour

1/2 cup plain flour

1/4 cup of cocoa

1/4 cup of roughly chopped chocolate

1 teaspoon baking powder

1/2 teaspoon baking soda

3/4 cup milk

Cream butter and sugar in bowl. Beat in egg. In another bowl sift plain flour and baking powder then combine with wholemeal flour. Dissolve soda in the milk. Add dry ingredients alternately with soda/milk  to the creamed mixture. Stir in chocolate pieces. Spoon mixture into lined muffin tins. Bake on medium high for 15- 20 minutes.

We ate these muffins while still warm and there were lovely pockets of  melted chocolate. Yum!
