I made a sponge today. I filled it with lemon curd, the lemon curd I made a few days ago.
Here is the recipe we used from the Edmunds cook book.
1 cup plain flour
3/4 cup sugar
3 tablespoons melted butter
2 tablespoons milk
2 teaspoons baking powder
Put flour ,sugar, eggs, butter and milk into electric mixer bowl. Beat on high-speed for 3 minutes.
Stir in baking powder. Pour into two lined 20cm tins. Bake at 190 celsius for 15 to 20 minutes.
When cool sandwich together with favourite filling.
I placed a stencil on top of the sponge and dusted icing sugar on top to finish.
We had some friends come over to help us eat our lemon curd filled sponge. YUM!
