Old Fashion Plum Cake

Plums plums everywhere! What to do? Make cake of course!

Old Fashion Plum cake

  • 150gm butter, softened
  • 1t vanilla essence
  • 3/4 cup sugar
  • 2 eggs
  • zest of 1 lemon
  • 1 1/2 cup wholemeal flour
  • 3 tsp baking powder
  • 1 cup milk
  • 5 or 6 plums, chopped and stoned
  • icing sugar, optional

Preheat oven to 180 degrees

Cream butter and sugar with the vanilla essence, until light and fluffy

Add the lightly beaten eggs, slowly, and then the zest

Sift flour and baking powder together, add to the creamed mixture, alternately with the milk, until smooth consistency achieved.

Stir in chopped plums

Pour mixture into a greased and lined deep 20cm tin


Bake for 45 -60  minutes or until the centre springs back and a skewer comes out clean
