Butter Cake And M&M Cookies

Butter cake is a great all-rounder for birthday cakes and this is the best recipe I have come across. It’s an oldie but a goodie from the classic New Zealand Edmonds cook book.


150g Butter

1 tsp Vanilla Extract

3/4 cup Sugar

2 Eggs

1 1/2 cups  Flour

3 tsp baking powder

3/4 cup Milk

Cream butter, vanilla and sugar. Add eggs and beat well. Sift baking powder and flour together, fold into creamed mixture. Mix in milk.

Pour Cake mixture in to a lined 20cm cake tin and bake at 180c for 35-40 minutes.

I’m not sure if this is a new product on the market or if I’m just slow on the up-take but at the supermarket I found this…

…its pink, its berry flavoured and its easy!

These M&M cookies are great if you enjoy a softer chewy cookie with a M&M crunch YUM!

This recipe makes around 24 cookies, I just freeze half the dough if I don’t need that many cookies.

2 ¼ cups PlainFlour
1 tsp Salt
1 tsp Baking Soda
2 Eggs
1 tsp Vanilla Extract
225 g of Unsalted Room Temperature Butter
¾ cup of Granulated Sugar
¾ of a Cup of Brown Sugar
1-2 cups of Milk Chocolate M&Ms

Cream butter and sugars together with vanilla extract, add eggs and mix well.

Combine salt, baking soda and flour then add this to the creamed mixture. Stir in M&MS

Roll  cookie dough into small balls and place on a tray lined with baking paper and space about 3-4 cms apart. These cookies will spread a lot so cook in small batches. Bake in a hot oven for 10 mins or until biscuits are golden.
