Feijoa Muffins With Lemon Icing

 While Dan started putting up the first of the plaster board in the lounge/dinning room the kids and I escaped to the kitchen to do some Sunday baking and we created these Feijoa muffins with Lemon icing.

We just replaced banana with Feijoa in a banana bread recipe and put the mix in muffin tins instead of a loaf tin.


1 3/4 cups Self Rising Flour

1/4 tsp Baking Soda

1/4 tsp Salt

1/2 cup Sugar

2 eggs

1/4 cup Milk

75 g Butter, melted

1 cup Mashed Feijoa

Sift flour, baking soda and salt into a bowl. Mix in sugar. In another bowl beat eggs. Stir in milk, butter and Feijoa. Mix quickly into dry ingredients, stirring until ingredients are just combined. Spoon into a lined muffin tin, I got twelve muffins out of this mix. Bake on medium high for 30 minuets or until golden. When muffins are cool ice with lemon icing

Lemon Icing

Mix 1 cup of icing sugar with the juice of half a lemon and add water until yo get a smooth paste consistency.
