An Oldie But A Goody

Today I made a Carrot Cake with Cream Cheese frosting for Dans birthday.

This recipe is super easy and makes a delicious moist Carrot Cake, it comes from the Edmonds cook book.

Carrot Cake

3 eggs

1/2 cup of oil

2 cups of plain flour

1 cup of sugar

3 teaspoons of baking soda

1/2 tsp cinnamon

3 cups grated carrot

1/2 cup walnuts, chopped

1 tsp grated orange rind

3/4 cup crushed pineapple

Beat eggs until thick, stir in oil. Sift flour, sugar, baking soda and cinnamon into the egg mixture and combine. Fold in carrots, walnuts, orange rind and pineapple. Line a 23cm round cake tin. Spoon mixture into tin. Bake in a medium hot oven for 40 minutes or until cake springs back when touched.

Yummy cream cheese frosting

2 Tbls soft butter

1/4 cup cream cheese

1 cup icing sugar

1/2 tsp grated orange or lemon rind

Beat butter and cream cheese until creamy. Mix in icing and grated orange or lemon rind, beating well to combine.

It is a rather indulgent cake with all that sugar and cream cheese but it’s worth it!
